Gluten-Free Pancake Mix
This mix just needs you to add a few things: buttermilk (or dairy-free), eggs, and melted butter (or oil). These are fluffy and flavourful just on their own, but you could add some sliced banana or berries to the batter too!

potato starch, teff flour, organic sorghum flour, organic quinoa flakes, organic baking powder, baking soda, sea salt, guar gum
Does not contain: gluten, oats, soy, corn, nuts
Instructions per 1/2 bag:
Mix together 1 1/2 cups buttermilk (or 1 cup dairy-free 'milk'), 1 large egg, 1 tbsp melted & cooled butter (or canola/sunflower oil), and 1/2 tsp vanilla in a bowl.
Whisk in dry ingredients until just combined (do not overmix!). Let batter sit 10 minutes.
In the meantime, heat greased pan or griddle and fry medium scoops of batter. Once you see little air bubbles forming on top, flip pancakes until done.
Makes 8-10 medium pancakes.
